Probably through deliberate steps, the middle word was altered from ‘umble’ to ‘humble’, because of the very meaning of the phrase. Ultimately derived from the Latin lumulus – a loin – ‘umbles’ used to refer to the offal of a deer which was used to make a pie for the huntsmen while the lord and his chums scoffed the venison.
